I highly recommend giving spears and kusarigama a try, they are super fun and have very unique movesets :3

Also the standard katana also has many cool parries for you to try, and yai quickdraw is super satisfying to use

I think you can change your stats later yeah, but tbh it doesn't matter much. Nioh's character strength comes mostly from gear, you'll get rarer and stronger loot as you progress ^^ btw don't forget to upgrade your main weapons, you can also soul match them to inherit traits
